Vegan Mushroom Risotto
Risotto is a classic Italian dish that can easily be adapted to a vegan lifestyle. This vegan mushroom risotto is an easy and delicious meal that can be made in just 30 minutes. Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup Arborio rice
- 2 cups vegetable broth
- 1/2 cup white wine
- 1/2 pound mushrooms, sliced
- 1 teaspoon thyme, chopped
- 1/4 cup vegan parmesan cheese
- Salt and pepper to taste
Instructions
1. Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until soft, about 5 minutes.
2. Add the Arborio rice and stir to combine. Cook for 2 minutes, stirring often.
3. Add the vegetable broth, white wine, mushrooms, and thyme. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, stirring occasionally, until the rice is cooked through.
4. Remove from heat and stir in the vegan parmesan cheese. Season with salt and pepper to taste.
